Did we have an amazing June or what? Fifteen consecutive days with the temperature under 100; I don’t think I was the only one who was spoiled. My thanks go out to those of you who attended the Echelon and Four Peaks Monday Night Chef’s Tables. It may have been warm outside, but inside we were sipping perfect summer beverages -- the deliciously soft Pinot Blanc and Chardonnay from Echelon, and the beautiful, refreshing, ice-cold handcrafted Peach Ale, Hefeweizen and Kiltlifter from the local artisans over on 8th Street in Tempe.

The temperatures are back to normal now; we’re cooking up the last of the soft shell crabs and beginning to see the first real tomatoes of summer. Our first Chef’s Table on July 13th will be designed around the luscious wines of Pine Ridge. Their mission to make world-class wines embraces three principles: pride of ownership, profound stewardship of the land, and a relentless dedication to quality. This Napa Valley winery has a collection of some very special estate vineyards, and an exceptional reputation for producing extraordinary wines.

Any time of year is prime time for tequila, but for some reason I think it just tastes better in the summer. I’m excited to see the explosion of small unique tequilas that have become available over the past few years, Partida being one of the best. Partida is produced on one of the leading blue agave estates in Amatitan, Jalisco, Mexico, the birthplace of premium tequilas. Just as winemaking must begin with the finest grapes, with tequila it comes down to the quality of the blue agave...which is cultivated for 7-10 years until the piñas are perfectly ripened with concentrated sugars, then harvested by hand. I hope you can join us on July 27th to see for yourself what makes this tequila so special!

All the turmoil in the world today reminds me how fortunate we are to live in this great country. Get out and celebrate our independence (book a room at the Ho and join in the fun at the pool) and have an exciting and safe Fourth of July weekend!
